- Take 1 cup of Maash Daal. Add turmeric powder and chili powder. And boil it. Not too mushy and soft. Tip: maash daal is getting soft very quick and easy so better do not cover it. It will be done in 15-30 minds.
- Pre-heat Tawa on medium flame and till then prepare vegetables. Cut thick onions (I tried the same, how the dhabba guy did it), big chunks of tomatoes, thick chopped chilies and julienne ginger.
- Pour Oil on pre-heat Tawa. Add onions and fry.
- Once onions are turning to pinkish color and getting softer, add tomatoes. Fry all together. Tip: Flame should be high and keep frying.
- Add crushed garlic with all seasoning (cumin powder, red chili powder, chaat masala) and salt. Again start frying on high flame.
- If you feel the daal is sticking on Tawa, pour more oil. Add chilies and ginger also and fry more
- Add coriander and mix it well and dish out or serve on Tawa with garma garam Chapati or naan.
