Ingredients and spices that need to be Make ready to make Hyderabadi Gosht Ka Achar:

  1. 1 kg Boneless Mutton or Beef
  2. 2 tbsp Ginger garlic paste
  3. 3 tbsp Red Chilli powder
  4. 2 tbsp Salt
  5. 1/2 tsp Turmeric powder
  6. 1 tsp Garam Masala
  7. 1 tsp Lemon juice
  8. for the achari masala
  9. 1 tsp Cumin Seeds
  10. 1 tsp Coriander Seeds
  11. 1 tsp Mustard Seeds
  12. 1/2 tsp Fenugreek Seeds
  13. 1/4 tsp Black Seeds or Kalonji
  14. for the tempering
  15. 2 Sprigs Curry Leaves
  16. 1 cup Oil
  17. 1 tsp Black Mustard Seeds
  18. 1 tsp Cumin Seeds
  19. 4-5 Dry Red Chillies
  20. 5-6 Garlic Cloves sliced

Instructions to make to make Hyderabadi Gosht Ka Achar

  1. Roast all the seeds mentioned under achari masala on a low heat. Powder them to a slightly rough texture and keep aside.
  2. Marinate Mutton or Beef with Ginger garlic paste and juice of one Lemon. Keep it covered in the refrigerator for about 2 hours.
  3. After 2 hours, place it in a Pressure cooker on a low heat. Do not pressure cook. Cook on a low heat with the lid on. Add Turmeric and Red Chilli powders to it. Also add half of Salt and Garam Masala.
  4. Allow it to cook for 30 minutes until it condenses and cooked through. Do not add any water as meat leaves water. After half an hour, increase the heat and cook until all the water dries up fully.
  5. Heat oil in a kadai and add Curry Leaves at first. Followed by Dry Red Chillies, Mustard and Cumin Seeds. And finally sliced Garlic cloves. Add cooked meat to this tempering and fry for about 5 minutes.
  6. After done, take it off the heat and add the powdered Achari Masala and the Garam Masala followed by the remaining Salt. Squeeze some more of Lemon juice into it and set aside for the flavours to infuse in.
  7. Use this immediately or after 2 days for the best flavour. Refrigerate it in an airtight container and use within 2 Months. More Oil can be added later on if desired just to keep it fresh. Relish this pickle with plain boiled Rice, Pulav, Puris or Parathas.
  8. TIP- Always cook meat on a slow fire. It gives this Pickle a better texture and flavour. Do not pressure cook. If it is Beef, then you can pressure cook but see to it that it remains firm yet soft.
